Why use VybeScript when Mac already has dictation?
Short answer
For a quick text, Apple Dictation is fine. VybeScript is for writing you actually send. It cleans up what you said, can tighten or formalize it, and lets you teach it your names and jargon. If Apple's dictation is enough for you, keep using it.
